Introduction: Gluten Free Chocolate Chip Pecan Blondies
These blondies are more satisfying than you would think. They are also very filling. But I learned that EVERYONE loves this recipe. I have given this recipe to a lot of people and decided to share them with you.
Step 1: Ingredients and Tools
You will need:
1 1/2 cups of butter
2 cups of brown sugar
1 tbsp vanilla
2 cups of almond flour
3/4 tsp xanthem gum
1/2 tsp salt
1 tsp baking powder
1 1/4 cup chocolate chips 1/4 reserved
3/4 cup chopped pecans 1/4 reserved
Then you will need these tools:
Teaspoon and tablespoon measurers
9x13 in pan
Foil or parchment paper
Grease for cooking
Step 2: Preparing
Preheat the oven to 350 degrees Fahrenheit. Line the 9x13 pan with parchment paper or tin foil and grease. (You do not need to grease the parchment paper)
Step 3: Dry Ingredients
Whisk together the flour, salt, xanthem gum, and the baking powder. Set aside.
Step 4: Wet Ingredients
In the large bowl beat the butter until smooth and creamy. Add the sugar and continue beating until smooth and fluffy, about two minutes. Add eggs and vanilla and combine.
Step 5: Dry+wet
Slowly add the dry ingredients to the wet ingredients and combine. Add the chocolate chips and nuts.
Step 6: In the Pan
Pour batter into prepared pan. (If the batter is thick and sticky, wet your hands and use your wet hands to smooth it out.) sprinkle with reserved nuts and chocolate chips. Bake for 25-28 minutes just until an inserted toothpick has moist crumbs. The blondies should be slightly browned on the edges and brownie consistency in the center.
Step 7: Cooling Off
Cool them in a pan for at least 20 minutes and then lift them out by the foil/paper. Remove to wire rack to finish cooling before storing Oman airtight container. ENJOY!!!!!!!!
