Introduction: Gluten Free Low Carb Ranch and Radish Bites

Here’s a tasty treat for you. This recipe combines fresh radishes, diced green onions, with mozzarella cheese and cream cheese for a new appetizer or snack. The flavors are delightful and the colors pop on the plate. If you are adhering to a gluten free low carb diet, this new recipe is sure to please.

Ingredients:

2 cups thinly sliced fresh radishes
1/8 cup dry ranch seasoning
2-3 tablespoons olive oil or non-stick cooking spray
8 ounces cream cheese at room temperature
1 cup shredded mozzarella cheese
5 eggs
1 teaspoon salt
1/2 teaspoon ground black pepper
1/8 cup diced green onions
Fresh dill

Step 1:

Spread radish slices out on a jelly pan lined with non-stick foil. You could also use parchment paper too as long as it wraps up the sides.
I’m a huge fan of using what you have; no need to go to the store 15 times in one day. Anyone else have that problem?

Step 2:

Spray radishes with a bit of non-stick cooking spray.

I recommend the butter or olive oil versions but what do I know? Maybe radishes taste good in coconut oil.

Step 3:

Preheat convection oven to 350 degrees Fahrenheit. If you don’t have a convection oven, this recipe will take about 30 percent longer at the same temperature. Just check periodically so you don’t burn anything. I bet burnt radishes taste pretty bad and smell even worse.

Step 4:

Sprinkle 1/8 cup dry ranch seasoning evenly across the radish slices. Place pan in the oven for 20 minutes.

Don’t have any ranch seasoning? You can DIY some; just consult Mr. Internet for the recipe. You probably won’t miss the xanthun gum.

Step 5:

While the radishes are baking, add 8 ounces of cream cheese to medium bowl.

Step 6:

Add 1 cup of shredded mozzarella cheese.

Step 7:

Stir mixture and then add 5 eggs.

Step 8:

Use an immersion blender to incorporate eggs and to get a smooth mixture. If you don’t have an immersion blender, you can use a hand mixer or stand mixer.

(Immersion blender just sounds fancy)

Step 9:

Add 1 teaspoon of salt.

I wonder what would happen if I asked for help locating sodium chloride at the grocery store.

Step 10:

Add 1/2 teaspoon of ground black pepper.

Step 11:

Add 1/8 cup diced green onions and stir.

Step 12:

Remove pan of radishes from the oven and pour liquid mixture on top of radishes. Bake for 15 minutes.

Take this time to call your mom. It will make her day.

Step 13:

Flip baked dish over on a piece of foil or other clean surface and cut into rectangles. Garnish with fresh dill. Serve warm and enjoy!
