You can replace the dates with honey or maple syrup (1/4 cup)

I have been looking for a gluten-free alternative to common protein bars since I'm into cycling, and these cookies might be a nice way to replace those "energy bars". Is there a way to replace the dates? They are not easy to find around here... Thank you!

They do RISE but they do not EXPAND :)

This looks really similar to a Larabar, pretty slick. What purpose is the baking soda since they don't rise?

Hope you enjoy!!! :)
