Gluten Free Rice Cream: Cheap Enough for the Whole Family
Looking for a grrreat, low-cost dessert that's gluten free? You should try my mom's rice cream treat! It's festive and filling and fun! Let me show you how...Mom makes her rice cream by simmering rice in a little bit of sweetened milk until it's all absorbed. Just cook 2 C. of rice however you normally do and then add 1 C. sweetened milk at the end. Put the lid back on and leave it on low for another 10-20 minutes. Stir it every once in a while until the rice gets really creamy and really soft. Then pour it into a bowl to cool.You can buy berry sauce or just make your own from berries and sugar! Just simmer 1 C. berries with 1 C. sugar in 1/2 C. of water. You'll see as you stir that the berries will cook down and get all juicy and sweet. After they've simmered in the juice for about 2 minutes, take the pan off the heat to cool completely.When the creamy rice has cooled, pour it into a pretty glass and put the cooled berry sauce on next. If you want, you can chill everything in the fridge ahead of time, but be sure to put a big squirt of whipped cream on top when you're ready to serve.And THAT, my friends, is rice cream done right!
