Introduction: Gluten Free Strawberry Butter

About: I like to make food and create recipes! I share them here because it makes the world more efficient if we all share good ideas. I have a gluten/dairy free child who inspires much of what I create in the ...

Ingredients:

1 cup salted butter (at room temp)
1 cup chopped strawberries (cut off stems before measuring in cup)
3 TB honey

Instructions:

Mix all ingredients in your food processor until completely smooth.  You will have to stop to scrape down the sides of the bowl a few times.  At first it will seem grainy and like its not working....but keep going!  All at once it will come together and become smooth.   You are done when it resembles frosting.

Store in a tightly covered container in the fridge.

Notes:   I had this in a restaurant once and fell in love.   I like to serve this on gluten free toast....but it would also go well with pancakes or waffles!

    Mmmmm

YOU ARE MY HERO I WAS JUST DIAGNOSED WITH sylliac disease so yea(and yes i think i spelt that right)

    FANTASTIC IDEA!!!! Yum!!
    I'm trying this tomorrow, definitely.

One tip: Since I only like to use organic strawberries, and fresh organic is sometimes hard to find or expensive, then for this recipe, I'm going to use frozen organic strawberries. They are less expensive, easier to find, and very convenient. Since they're being whipped up, it won't matter that they are frozen. But first, I would rinse, thaw, and then let dry.

I just got 12 pints of strawberries yesterday, and need to try this!

Awesome. I had never heard of such a treat before. I wanna try. :)

Ooh, this sounds intriguing! Strawberry and honey sound like they would taste wonderful together :)
