These sticky, gooey lemon bars are pure, citrus-y perfection!

Step 1: Ingredients

  • 1/2 cup of butter, melted
  • 1/2 cup caster/granulated sugar
  • 1/4 cup light brown sugar
  • 1 and 1/2 cup flour
  • juice and zest of 1 lemon
  • 1/2 cup golden syrup
  • 1/2 cup lemon curd

Step 2:

In a large bowl, combine the melted butter and sugars.

Step 3:

Stir in the flour and set aside about 3/4 of a cup of this dry, crumbly mixture for the crumble topping.

Step 4:

Spoon the remaining mixture evenly into a greased baking tin and press down with the spoon so that it forms the crust. Set aside.

Step 5:

In another bowl, mix the lemon curd, golden syrup, lemon juice and zest together. Make sure to stir well so that everything is well combined.

Step 6:

Pour the lemon curd mixture on top of the crust, and then sprinkle the remaining crumble mixture over it.

Step 7:

Bake at 180'C/350'F for about 30 minutes. Remove from the oven and allow to cool for 15 minutes. Or, if you're greedy like me, enjoy them while they're hot!
