Step 3: Pour in the Citric Acid.

1. Pour the dissolved Citric Acid in the milk and stir for 1 minute.
2. Sprinkle the other teaspoon of Citric Acid in the milk and sir for another minute. You will probably see the milk start to curdle very shortly.

how much curdling is good? ive done this and it curdled like crazy shortly after..

Seems to me that sprinkling the citric acid in as you say would cause uneven acidification,but it seems to work well for you.Maybe I'll have to try that next time.
