No, judging by the third and fourth pictures above, I think he really does mean to tilt the knife at a 45 degree angle. So, first you cutting it into cubes, then when you tilt the knife 45 degrees and cut again, you end up cutting the cubes into triangular-shaped pieces. Take a look at all four pictures in order, and you'll understand.
