I am using buttermilk and plain yogurt in place of citric acid...with that, can I continue on at this step or do I need to wait overnight until curds "spin" in 185º water???

my curd turned to one solid curd, unlike yours that looks like cottage cheese. did I heat it too high? I have 2 thermometers and I split the difference. :)
