Green Beans

Green beans, aka string beans are a healthy addition to any meal. They're a tasty way to get some veggies out on the dinner table, and are a hallmark dish of Thanksgiving and Christmas.

The green beans in this recipe are cooked in two parts: first blanched, then sauteed. You can easily blanch the beans ahead of time, put them in the fridge, and then combine them with the other ingredients and saute them just before you're ready to serve.

Step 1: Ingredients

  • green beans (figure 1/4 pound per person)
  • almond slivers
  • 2 tbsp unsalted butter
  • salt and pepper

Looks great! I bought some green beans at the store this morning and will make them tonight. As I get older (30! yikes!) and read more i'm convinced that i never liked vegetables as a kid because they just weren't cooked properly.

I just made a variant of these beans, first sauteing a finely-chopped onion and some equivalently-sized bits of dry chorizo in a mix of butter and olive oil, then adding the beans and nuts. Delicious! Everything is better with chorizo.

I usually cook them a little longer, and while they're cooking I saute up some (often a bunch) of garlic in extra virgin olive oil (adding a little bit of lemon juice right before the garlic's done) and pour it over the beans. Season with a little salt and fresh cracked pepper and you've got some good beans! I'll have to try it this way, but definitely gunna add some garlic! Nice instructable! :)

These were awesome. I'm normally too lazy to blanch the beans ahead of time, but it's clearly worth the effort.

I keep reminding myself to eat more green beans because they are so healthy, but I never had a good recipe for them. I'll try this, almond slivers sound like a good addition to the beans.
