Introduction: Healthy Chewy Cookies (VEGAN!)

These cookies are delicious, chewy and you won't even taste the avacado! They are vegan and you would never even taste it!

Step 1: Ingredients

You will need:
1/4 cup soy, almond or any non-dairy milk or your choice *you can always use water instead*
1 teaspoon of vanilla or vanilla paste
1/2 cup mashed avocado
1/2 cup vegan butter of your choice (I used SOFTENED, NOT MELTED coconut oil
1/2 cup brown sugar
*Just under* 1/2 cup white sugar or sweetener
Large dollap of agave nectar
2 1/4 cups flour (coconut, oat, all purpose, gluten free)
1/2 tsp salt
1 tsp baking soda NOT BAKING POWDER

Step 2: Making the Dough

Place whatever butter you are using, the avocado, the sugars and the agave in a large mixing bowl. Blend with an electric mixer. Now add the milk substitute and vanilla and mix well until it has a creamy consistency.

Place all the remaining ingredients into a medium sized bowl. Whisk together. Dump this into the large bowl. Mix with the hand mixer or a wooden spoon. *i found a silicone spoon worked well*

Step 3: Preparing to Bake

Roll the dough out until it is about 1/2 an inch thick. Cut it into about 12-14 equal squares with a small sharp knife. Kneed each piece into a rough circle or use a cookie cutter if you wish them to be all the same.
Line a cookie sheet with parchment paper and lay the cookies out. You may need to use 2 cookie sheets to fit them all on. Preheat oven to 350 F/ 180 C. Bake for 8-10 minutes

Step 4:

Remove from the oven. Leave for 5 minutes on the counter top then transfer to a wire rack with a spatula until cool or eat warm.
