Introduction: Healthy Chicken and Potato Pot Pie
This delicious and nutritious recipe yield 4 individual sized pot pies. They are decorated with a "Pi" symbol to add festive flare.
Step 1: Healthy Chicken Potato Pot Pie
Set out all your ingredients:
4 pie rounds cut to fit the top of 4 small ramekins
1 box or can Cream of Potato Soup- I like Rosemary Potato Chowder
10 oz ground chicken
1/2 cup celery- diced
1/3 cup onion- diced
1/4 cup carrots- diced
2 tablespoons olive oil
Butter to grease ramekins
1 egg, lightly beaten, to brush on top of pot pie
Preheat oven to 375 degrees.
Step 2: Saute Onions, Carrots, and Celery in Olive Oil
Heat the olive oil over medium heat and saute the vegetable until the onions are translucent
Step 3: Add the Chicken
Add the ground chicken to the vegetables and stir constantly until chicken is cooked, about 5 minutes
Step 4: Pour in Cream Soup
Pour in the cream soup and let slowly simmer over low heat for 3-5 minutes
Step 5: Fill the Ramekins
Using a ladle, spoon equal amounts of the chicken vegetable and soup mixture into each ramekin.
Step 6: Cover With Pie Crust and Brush With Egg
Place one pie crust round over each ramekin and brush egg wash over the top.
Make a slit in each one to vent. I like to make a slit in the shape of "Pi"
Step 7: Bake
Bake at 375 degrees for 20 minutes, or until golden brown.
Step 8: ENJOY
