Introduction: Herb Crusted Chicken - Cooking From the Garden

In the attached video we share a herb crusted chicken recipe using items we have grown and raised on our homestead.

Step 1: Ingredients:

  • 2 Chicken Breast (Flattened) - 1/4 Cup Milk
  • 1/2 Cup Bread Crumbs
  • 2 tsp Fox Point or Italian Seasoning
  • 1 tsp Chives
  • 3 Tbsp Butter
  • 3 Cloves of Garlic (Minced)
  • 1/2 Cup Chicken Broth
  • 1/4 Can Diced Tomatoes (2 medium size tomatoes)
  • 1 Cup Heavy Whipping Cream
  • 1/2 Cup Parmesan
  • 2 Tbsp Basil
  • Dash of Black Pepper

Step 2: Directions:

- Place bread crumbs, fox point (or Italian), chives in a bowl and mix
- Place milk in a separate bowl

- In a skillet, heat butter on medium heat, meanwhile pound chicken flat and thin for even cooking

- Dip Chicken in Milk, then coat with bread crumb Mixture

- Cook Chicken in butter until browned and cooked through (about 10 Minutes)

- Remove Chicken and keep warm in oven

- In Same skillet, add garlic and saute for 30 seconds

- Add Chicken broth and bring to a boil and stir one minute

- Stir in heavy whipping cream and tomatoes, bring to a boil and stir one minute

- Reduce heat to low, add Parmesan cheese, basic and pepper

- Stir sauce and cook until heated through and thickened (About 5 Minutes)

- Serve by pouring sauce over chicken breast
