Almost time for cookie-exchange with your family, friends, and neighbors!

A box to the flyer delivery person, a box to the postman, a box to the teacher, or whoever you'd like to give some wonderful sweets. It is time to spread some cheeriness :)

Step 1: Rolo Cookies

1 c smooth peanut butter

1 c sugar

1 egg

1 tsp vanilla essence

20-24 mini chocolate Rolo

Cream peanut butter and sugar. Add egg and vanilla, beat until well blended

Roll into balls and place on ungreased baking sheets (not too close one another, about 2 inch apart)

Bake at 350 F for 10-12 mins (top will slightly cracked)

Immediately press Rolo on each cookie, cool on sheet for 5 minutes then move to wire racks

NOTE: I make this almost yearly, but I learned when I changed my oven, I had to adjust the temperature. My other oven baked these cookies at 8 mins

Step 2: M N Ms Cookies

3/4 c shortening

1 c sugar, divided

1/2 tsp almond extract

1 3/4 c flour

1/2 tsp BSoda

1/4 tsp salt

1 generously cup or more! M n M's

2 egg whites

Cream shortening and 3/4 c sugar, then beat in extract

Combine flour, soda, salt, and gradually add to creamed mixture, stir in MnMs

In another bowl, beat egg whites until soft peaks, gradually add in sugar, beat until stiff peaks. Fold into dough

Drop by tbsp on ungreased sheet and bake at 350 F for 12-15 minutes (golden brown)

Cool for a minute on sheet then move cookies to wire racks

Step 3: Molasses Cookies

3/4 c margarine, melted

1 c sugar

1 egg

1/4 c molasses

2 c AP flour

2 tsp Bsoda

1/2 tsp salt

1 tsp each cinnamon powder, ginger powder, allspice powder

1/2 c sugar for rolling

Mix warm melted margarine, sugar, and egg. Add in molasses. Add in dry ingredients, mix well. Place in the fridge an h.

Take a tbsp dough and shape balls, roll them in sugar, place on baking sheet (you can flat them slightly or as is).

Bake on preheated 375 F for 8 mins.

Step 4: Festive Shortbread Logs

1 c butter

3/4 c icing sugar

1 tsp vanilla essence

2 c AP flour

crushed mint candies

chocolate chip/bar/melts

Cream butter and sugar, add in essence followed with flour, gradually.

Get a tbsp dough and shape logs.

Bake at preheated 350 F for 9 mins.

Let cool on rack, dip one side in melted chocolate and sprinkle with crushed candies.

Step 5: No Fuss Choc Cookies

1 c butter

1 c icing sugar

1 tsp vanilla essence

1 tbsp choc paste

1/2 tbsp cocoa powder

2 c AP flour

mini Rolo

Cream butter and sugar, add in essence and paste followed with flour and cocoa, gradually.

Get a tbsp dough, flat and place Rolo and shape balls.

Bake at preheated 350 F for 9 mins.

Let cool on rack

Step 6: Enjoy~
