Introduction: Zotz.......ON a STICK!

I love those zotz. If you have never had one, it is a hard candy with a powder inside that reacts to saliva and produces carbon dioxide bubbles, thus forming lots of sour foam. I found out that the three ingredients are an acid, a base and a sweetner. The acid is citric acid and the base is baking soda. (And the sweetner is sugar)

So I found out how to make the powder, but then I thought, why don't I make imitation zotz.....ON A STICK! My mother makes hard candy suckers so I thought, why don't I just put some of that powder in the suckers?

Step 1: Step One.... Ingredients

You can use this recipie or use your own hard candy recipe.  I did two batches (one to be the first layer of the sucker and another to be the top) so you might have to do two of these measurements.

-1 cup sugar
-1/3 cup white corn syrup (I used light corn syrup)
-1/2 cup water
-1 tsp. flavoring (you could use 1/2 tsp. but it wouldn't taste good)
-food coloring
-1/4 citric acid (optional for sucker mix)

Things you do need: (For the fizz powder)

-1 tsp. citric acid (not optional for fizz)
-1 tsp. baking soda
-2 tsp. powdered sugar

Other non-food stuff:

-Sucker sticks
-Sucker molds
-awesomeness (optional)

Step 2: Step Two...... Setting Up the Molds

This part matters about what kind of sucker molds you have.

I put a stick in, put a clip on the mold, put it on foil then spray it with pam.  Your sucker molds should come with instructions. 

Step 3: Step Three....... Mixing the Fizzy Stuff

This part is easy.  All you do is put the 1 tsp. citric acid, the 1 tsp. baking soda and the 2 tsp. powdered sugar. 

You can dip your pinkie in the powder and then lick it.  It feels so cool!

Step 4: Step Four.......... Mixing the Sucker Mix

I am reading off the recipe just do what it says.

Combine sugar, water, corn syrup in a small saucepan.  Boil until it reaches 275 degrees then stir in the citric acid (optional) flavoring and food coloring.  Stir intil it cools down to 275 degrees (it will go above 275 degrees when you take it off the stove).  Hurry and look at the next step before the mix cools down to much!

When it heats up to 200 degrees it stays on 200 then goes up all of a sudden.

Step 5: Step Five............ Pouring the First Batch

Go over to your molds with the pot full of sucker mix in hand.  Find a mold to start on and pour in a little less then half way.  If you put all the molds in the middle like I did, you can just pour and not spill that much. 

Step 6: Step Six........ Putting in the Powder

This part is fairly easy.  Right before the candy dries, it will be a state of goo where you will get the 1/4 tsp. hemisphere-ish measuring device and put dents in the middle of the sucker.
The sucker should be gooey enough where you can make that dent and it should stay in that shape.  Look at the picture.

Next, put 1/8 tsp. of the fizzy powder in that dent you make and try to keep the powder in the middle.  If you don't, there will be a hole in the side where saliva will get to and use all of the fizzy stuff inside so you won't have fizzy stuff to look forward to when you start licking the sucker.

If you pat down the powder, it should go down into the hole and pack down pretty well.

Step 7: Step Seven...... Make a New Batch

Make a second batch by following step four.

Step 8: Step Eight....... Finishing the Suckers

Get the mix from step seven and fill the remaining space in the molds with the new mix and let it cool.

Step 9: Step Nine........ Removing the Molds

Ater the suckers have cooled you can finally take the sucker from the mold.  Each mold is different so I won't explain this part.

Step 10: Step Ten................ Voting for Me

You can eat the suckers!
