Introduction: Homemade Fettuccine Noodles & Alfredo Sauce

This Fettuccine Alfredo is AMAZING! In fact my husband has said many times that it beats Olive Garden's! So those of you that are Olive Garden fans, get ready to be pleasantly surprised, you are in for a real treat! I lived in Italy for a while and a dear family taught me how to make this and I have now passed it along to my girls. They are becoming experts themselves! I hope this recipe is everything you hoped for and more! Shall we get started?!

*Just a heads up, this recipe is beyond unhealthy and may dirty every single dish in your kitchen! I promise it will all be worth it though!

Step 1: Step 1: Ingredients & Tools

You will need three simple ingredients for your egg pasta dough:

2 cups of flour
4 eggs
1/4 cup of oil


For the Alfredo sauce, you will need:

2 cups of heavy cream
1 stick of unsalted butter
2 Tablespoons of cream cheese
3/4 cup of parmesan cheese
1 teaspoon of garlic powder
1 teaspoon of nutmeg
1/2 teaspoon of salt

*You will also need a pasta maker and a cookie sheet in order to make the pasta and lay it out to dry.

Step 2: Step 2: Make Egg Pasta Dough

*Follow all steps in order.

1-Pour flour onto table surface and create a bowl effect.
2-Beat eggs and pour half into center of flour.
3- Gently whisk the eggs, gradually pulling in the flour from the sides.
4-Continue whisking and add half the oil.
5-Add the remaining eggs and continue to whisk the eggs and pull the flour in.
6-Add remaining oil if needed.
7-Gather the flour in when the walls break down and the eggs start to spill out. You will be ready to knead your dough at that point.
8-Knead the dough until it starts to form and continue until you can form a ball. 
9-Lastly, place the dough in a bowl and cover so that your dough won't dry out. 
10-Set aside and work on the sauce.

Side Note: Hang in there if you get frustrated with the dough. If it is too dry, you can always add a little more oil or even a little water. 


Step 3: Make the Alfredo Sauce

In a saucepan, combine butter, heavy cream, and cream cheese. Cook on medium-low heat until it is melted and has mixed well, about 10 minutes.

In the meantime, fill a large pot with water, place on high and bring to a boil.  

Next add the parmesan cheese, garlic powder, nutmeg, and salt. Simmer for another 10-15 minutes on low. 

Let sauce simmer and go make the noodles.

Step 4: Make the Fettuccine Noodles

Uncover the dough and divide it into three separate balls. Remove one ball of dough and cover the remaining two while you are making the noodles.

CAUTION: Before beginning you will want to take a little flour and sprinkle it over your pasta machine, especially in the parts that the dough will be going through. You will also need to sprinkle it over you noodles once you have made them to prevent them from sticking to one another. Make sure that you do not use too much flour, it can change the flavor of your noodles. 

Prep the dough by flattening it out with your palms until it is about 1/2 inch thick. At this point you will use your pasta maker. Hopefully you are familiar with your pasta machine, but if you aren't I will provide a little more detail that will be helpful.

CAUTION: First things first! Read the instructions for your pasta machine and become familiar with it before you start!

There is a lever on the left side that goes from levels # 1-6 and it determines how thin your pasta will come out. When you start out at first you will want to put it on the widest setting  which should be lever #1. You will use settings # 1, 3, and 5. As you can see in the photo below I ran the dough through the first time and folded it over and ran it through setting #1 again. (DO NOT FOLD THE DOUGH OVER AGAIN) Then I changed it to #3 and ran it through twiceand followed the same patter for setting #5. However, I only folded the dough over on the first setting. You will not need to do this on settings # 3 and 5. 

I prefer to flatten out my dough first before cutting the noodles. Set aside the strips of dough you just flattened out and get another ball of dough and repeat the directions above. Repeat one more time with the third ball of dough.

Before you start, you will notice I cut long pieces of dough in half or even thirds and then flattened them out to a level 5. Once the dough is thin enough (but not to the point it will tear) you are ready to make the noodles. Use your pasta machine to cut the dough by placing the dough in the fettuccine mold. 

NOTE: Make sure you consistently roll the dough through the machine. If you break or go in the opposite direction it can ruin your dough or noodles.  

Step 5: Cook Your Noodles

Make sure your water has come to a full boil and place a cookie sheet of noodles in the water. You cannot place all the noodles in the water at once. Cook the noodles for 3-4 minutes, you will see them rise to the surface when they are done. Place in a large bowl and immediately add sauce to the noodles and mix. You will repeat these same steps until you have cooked all the noodles. 

Step 6: Bon Appetit!
