Introduction: Homemade SPAM With Pork Shoulder & Ham

Spam, spam, spam, it is a poor man feast. Most people will not admit they love spam. Some may never even try it. Canned meat just doesn’t feel right.

How about some homemade spam? Would it be any better? I am curious, after trying few recipes; this is the one I feel comfortable eating and is not bad after all.

This homemade version does not contain any preservative and you can control amount of salt going into the food. Store-bought is way too salty to my liking.

Step 1: Ingredients


You need only few simple ingredients.

  • 28 oz (800 g) pork shoulder (skinless)
  • 4 oz (110 g) smoked ham (chopped)
  • 1 1/2 tsps fine salt
  • 1 1/2 tsps fine sugar
  • 1/2 tsp garlic powder
  • 8 tbsps ICE water
  • 3 tbsps potato starch

Step 2: Cut Pork Into Cubes

Cut pork shoulder into small cubes.

Step 3: Keep Meat in Freezer

Keep pork and ham in freezer for 90 minutes. You want them to be really cold but not completely frozen.

Step 4: Process in Food Processor

Add in pork, ham, salt, sugar and garlic powder and process in food processor. Process until the mixture emulsified (batter-like consistency).

Note:

  • Mix potato starch with icy water before adding them slowly to meat batter.
  • Process meat in small batches depend on the size of your food processor.

Step 5: Cooking

Water bath in oven at 300ºF/150ºC for 2 hours

Step 6: Weight Down and Refrigerate

  1. Remove from oven and discard any meat juice and fat completely.
  2. Put some weight on top of the Spam and keep in the refrigerator overnight.

You Spam will be ready the next day. Cut into slices and keep in the freezer. Consume within 2 month.

It's fun to be able to make processed food from scratch and this recipe is definitely worth trying. Spam is one of the most versatile food, there are virtually hundreds of way to eat it. Good luck and enjoy.
