I'm an omnivore, but I would make these if they were really tasty. Recipes in the past had to be smothered in something like maggie sauce to taste acceptable.
I'm bookmarking to try a quarter batch, if they live up to the hype, I imagine a hamburger press would be well worth the outlay.
The mushrooms are the only thing in the recipe that isn't dirt cheap. I do love my umami though.
I mixed up about a third size batch, used 1 egg and i used instant potatoes. By adding the potatoes dry, I could "walk" up to the right consistency with additional fluid.
I even added a dash of fish sauce to up the umami.
The first one was pretty good, but it fell apart in the pan. I added about 1 Tbsp of white all purpose flour to the remaining mix. That seemed to help
I liked the patties to be pretty thin, maybe 3/8 inch, because that lets more of the mashed potatoes brown.
I have also made these with baby bella mushrooms. Sooo, good.
