Introduction: Honey Roasted Cashew Butter

This recipe is SO easy to make and tastes delicious! My boys love this spread on toast, on a banana, or even just on a spoon.   It has the consistency of the inside of a Reese's Peanut Butter Cup...so not super runny/oily.   If you prefer a smoother nut butter, just add more oil.

Ingredients:

2 cups whole roasted cashews (I buy roasted salted cashews)
2 Tablespoons melted coconut oil
1 to 2 Tablespoons honey
1/2 teaspoon sea salt   (you might need slightly more if your cashews are not salted)

Instructions:

1.  Put the cashews in your food processor.  Pulse until they turn into a very fine crumble. (about 20-30 seconds)
2.  Add the honey, salt and coconut oil.    Turn on high speed to mix everything completely.  This will take about 1-2 minutes.  Stop and scrape the sides and bottom of the bowl to make sure everything is incorporated.   The mixture will form a ball (just like a baseball).   Use a spoon to break up the ball, and pulse about 10 times.....this will keep the dough from forming a ball again.   
3.  Taste your cashew butter!   If you like it, you are done....if not, add a little more salt, oil or honey to make it just the way you like it.

You can store this in an airtight container in the fridge or on the counter.   I use a covered glass pyrex container and keep it on the counter :)
