Ingredients:
  • 4 oz Mexican Chorizo Sausage
  • 4 oz. Cream Cheese-softened
  • 3/4 cup Sour Cream
  • 1 1/2 cups grated Colby Jack Cheese- (1/4 cup reserved for garnish)
  • 3/4 cup Black Olives- coarsely chopped- (1/4 cup reserved for garnish)
  • 1/4 cup plus 2 Tablespoons Green onions- thinly sliced- (2 Tablespoons reserved for garnish)
  • 2 teaspoons Chipotle Chilis in Adobo- minced
  • 1/2 teaspoon Garlic Seasoning Salt

Prep:  

Squeeze the chorizo from the casing into a small heavy saute pan. Stir in 2 tablespoons water and cook over medium-high heat until the mixture begins to simmer. Reduce heat to low, simmer 5-10 minutes. Remove from heat and set aside. Allow it to cool completely.

Mince the chipotle chilis. Slice the green onions. Rinse and chop the black olives. Grate the cheese.

Set the garnish portions aside.

lmao..get out of my head ! I was going to make something very similar for the hot sauce contest but decided to wait for a superbowl snacks contest.. oh well, although similar results mine is totally different. This does sound delicious even if its a little bland = ) chipoltes have a great smokey flavor to mix with the chorizo and the cream cheese sour cream combo will cool the heat while giving a great texture., The only problem I see is that you only made a single portion....
