pressed down, the "blades" (some use thick wire) cut up the shortening, the contour is there to help match your mixing bowl ... you still need a knife or whatnot to clean it out every once in a while, but its much faster, and possibly safer my mom, who always thought i needed to know how to cook (thanks mom!) bought a couple of these at antique stores for like 99 cents, except they have wood handles and wires a quick search on google reviled that that the "wood n wires" model can be had brand new for 4.99, this one was 5.99 altho, like anything else they can go up or down in price
