  • 1 cup Greek yogurt
  • 2 garlic cloves, peeled and minced
  • 1/2 large cucumber, peeled and diced
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • To Taste sea salt
  • To Taste ground black pepper

    Really simple and looks great, have to try it!

    It's a great dip but two cloves of garlic per yoghurt cup may too much for many people. First try using 1 clove per cup.

    If your knife mincing skills are not of a professional level it's better to use a garlic press. Garlic pieces should not be detectable in the dip.

    You should leave your diced cucumber wrapped in a paper towel for 30 mins to lose some water, otherwise it'll dilute the yoghurt.

    You can substitute parsley for dill, in fact parsley is the standard way to prepare tzatziki in Greece. Chewing a small piece of parsley is also a good way to get rid of the garlic breath afterwards.

    For a great appetizer, cut your cucumber in inch long pieces, scoop out most of the cucumber leaving one side intact so as to form a small cup. Use the scooped out cucumber to prepare the tzatziki and fill the cucumber cups with it. Decorate with 1-2 parsley leaves. Very refreshing during the summer!
