You see, the head, when removed, enters a state of trauma preventing it from dying or changing until reconnected with a body. Basically, it's so shocked that it is very near death that it doesn't die. However, because it is shocked, it has to get another body to be able to function again. Thus, if you can remove the head before it all dies (which it won't, this same principle works with all things LEGO) and give it a new body, it survives.
