Beautifully soft & creamy Rolo Caramel Fudge that requires only 4 ingredients, a microwave and about 10 minutes of your time. Sounds too good to be true right? Well it isn’t!! It’s REAL people! Very, very real. So real in fact, that I made a batch just 24 hours ago and it’s already gone. You know you need this in your life…

Here is what you will need to make approx 36 pieces.

  • 400g White Chocolate
  • 1 x 397g Tin of Carnation Caramel
  • 125g Icing Sugar, sifted
  • 350g Rolos

Essential Equipment

  • 20cm (8″) Baking Tin or Silicone Pan

Step 1: Getting Started

If you are using a baking tin, line the base and sides with baking paper. If you are using a silicone pan, you don’t need to line it.

First up, break the white chocolate into a large glass bowl then pour in the caramel.

Step 2: Making the Fudge

Melt in the microwave on full power for 30 seconds. Give it a good stir then heat again in 10 to 20 second intervals stirring well between each time until it’s all smooth & melted.

It’s worth noting that you can also do this step in a saucepan over a low heat too, so don’t worry if you don’t own a microwave!

Step 3: Making the Fudge

Then gently stir in the sifted icing sugar.

Step 4: Making the Fudge

Finally, stir through 3 quarters of the rolos.

Step 5: To Finish

Now all you need to do is pour the mixture into your prepared tin.

Step 6: To Finish

And press the remaining Rolos right into the top.

Step 7: Tadah!

That’s it! Now pop it into the fridge for 3-4 hours or overnight to set before slicing into 36 pieces. (A 6×6 grid.)

Store in an airtight container in the fridge and consume within 1 week.

<p>This is my kind of fudge! More caramel, less chocolate. I didn't know they sold caramel in a tin/can. I've never seen it in the US, but then again, I've never looked for it. </p>
<p>You can find the caramel (brand La Leche or something like that) at Walmart.</p>

<p>Eagle Brand sweetened condensed milk has a caramel (dulce de leche) version, haven't seen a Carnation version though </p>
<p>In the U.S., my daughter says that carnation sweetened condensed milk comes original and caramelized.</p>
