Now add  two pounds of cubed stew beef to the mixture. I add the beef last because it is bulky and it's so much easier to mix everything together before it's added.

to add more flavor to your stew, I would suggest you pan fry the beef cube before adding them to the mixture. Also use half your wine with the soup base and use the other half to deglaze the pan you cooked the meet in then add that to the crockpot. it adds a lot of depth to the flavor of the stew.

i second this remark. most of your "depth" flavors come from the browning of your meat. when you deglaze, you get the good bits in there, too. just talking about it is making my mouth water as we speak.
