Ingredients:

1 head of cauliflower

1 tbsp butter

salt and pepper

cilantro to taste

1/4 cup lime juice


Steps:

Cut off leaves near the stem.

Using the larger side of a cheese grater, grate the full head of cauliflower.

Melt butter in large stove top pan then add cauliflower.

Add remaining ingredients and cook on medium heat for about 15-20 minutes until reaches a rice consistency.
