Introduction: How to Make Gordita Pizzas
This Instructable shows how to make gordita pizzas which is a simple Mexican dish. After all the ingrediencts and cooking tools are gathered they are very simple to make and should take 30-45 minutes to complete. This recipie makes enough for eight individual pizzas which serves four people.
Before starting readers should have the following cooking tools readily available:
-Large sauce pan
-Small sauce pan
-2 large baking sheets
Note: All tools shall be cleaned prior to use.
Note: Workers shall wash hands prior to handling any food.
Step 1: Gather All Ingredients
-8 small flour tortilla shells
-1 lb ground beef
-1 package of taco seasoning
-1/2 cup of water
-1 can refried beans
-1 bag shreaded Mexican cheese blend
-1 head lettuce
-spicy ranch dressing
Note: Picture shows an example of acceptable ingredients, however other brands are acceptable.
Step 2: Pre-Heat the Oven
Pre-heat the oven to 375 degrees Fahrenheit.
Step 3: Brown Meat
Place 1 pound of ground beef into Large sauce pan. Place sauce pan on stove top and turn burner to medium-high. Break up the beef and continue mixing around so all pieces turn from pink to brown.
Step 4: Drain Grease
To drain grease, tilt the sauce pan and push all the beef to the higher side of the pan so all the grease collects at the lower side. Spoon out all grease into a can, mug, or Tupperware container.
Note: Hot grease is not good to put down a sink drain so after the grease cools it will harden and be able to be thrown in the trash.
Step 5: Season the Beef
Add the packet of Mexican seasoning and 1/2 cup of water to the beef. Mix in and continue mixing while it simmers. Allow beef to simmer for about 15 minutes or until most of the moisture has soaked into the beef. Continue mixing the beef during the 15 minutes in order to prevent burning.
Step 6: Fry the Tortillas
In small sauce pan heat 2 tablespoons of vegetable oil on medium heat. After allowing the oil to heat for a few minutes place one tortilla shell in the pan and allow to cook until golden brown and then turn over and allow other side to cook. Once done place the tortilla on some paper towels to drain some of the oil. Repeat this step with all 8 tortillas. Vegetable oil will need to be added every other shell or as needed.
Step 7: Place Tortilla Shells on Baking Sheets
Remove the blotted tortilla shells from the paper towels and place onto baking sheets as spread out as possible.
Step 8: Spread Refried Beans
Open can of refried beans. Spread about 2 tablespoons of refried beans on one side of each tortilla shell.
Note: More or less may be added according to taste.
Step 9: Add Meat
After the meat is finished simmering it is ready to be placed on the tortilla shells. Divide the pound of meat into eight equal servings and place on top of the refried beans. Evenly spread the meat across the whole tortilla leaving some room around the edge.
Step 10: Preparing the Lettuce
Rinse the head of lettuce with water and remove the stem. After the lettuce is clean shred into small pieces. Shred enough so that it would fill a regular sized cereal bowl.
Step 11: Add Toppings
Add as much or as little shredded lettuce as desired on top of the ground beef. Next sprinkle Mexican shredded cheese on top of the lettuce. Again you may add as much or as little as desired. Lastly drizzle spicy ranch dressing on top of everything.
Note: Additional toppings may be added as desired may include but are not limited to the following: black olives, diced tomatoes banana peppers, jalapenos, sour cream, and black beans.
Step 12: Bake in the Oven
Place baking sheets containing the gordita pizzas into the oven on shelves close to the middle. Close the oven and set a timer for 7 minutes.
Step 13: Remove From the Oven
After the 7 minutes carefully remove the baking sheets using hot pads as they will be very hot. Place the baking sheets on top of the stove.
Step 14: Serve
Using the spatula, place a gordita pizza on a plate for each person.

There are now eight gordita pizzas which are now complete so you may eat them!
