Introduction: How to Make Peking Duck Pancakes
In this instructable I will show you how to make Peking duck pancakes with just 4 ingredients. These little pancakes can be eaten with vegetables and of course Peking duck. The name might suggest otherwise, but these are vegan and vegetarian pancakes and you can make them quite easily yourself.
To make the pancakes you only need the following 4 ingredients: flour, salt, water, sesame oil. The secret of making good Peking duck pancakes is the kneading. Peking duck pancakes require far more kneading time than for example flour tortillas.
Step 1: Overview
You start by making the dough. Start by putting the flour and salt into a bowl. Stir through to mix the salt and flour before adding boiling water to it. Stir the water into the flour with a wooden spoon. Let it cool until you can knead the dough.
Here is where it differs from a tortilla. Flour a work surface and knead the dough on the counter top for at least 10 minutes until you get a soft silky dough. Cover with a clean kitchen towel and let it rest 30 minutes. More kneading now for another 5 minutes. Then take the dough and roll it into a long sausage shape before cutting into 7 or 8 pieces. Now you need the sesame oil. First to cover the dough balls with it and second to brush the skillet or baking pan with it.
When you dip a dough ball into the sesame oil take a rolling pin and start rolling the dough ball into a thin pancake. The pancake is very fragile so be careful when you lift it into a pan. Heat a pan on medium and bake the pancake. Prevent the pancakes from getting brown. As soon as it is dry turn and bake the other side of the pancake. Stack the pancakes and keep warm in a clean kitchen towel.
They are ready to eat with vegetables like spring onions cut Julienne, Peking duck and Hoisin sauce or you can eat with carrots, spring onions, cucumber and onions cut Julienne. To keep them warm I use a pan with boiling water and a bamboo steamer.

Step 3: What Do You Need to Make This Recipe
- ⅔ cup flour
- ½ teaspoon salt
- ½ cup boiling water
- 2 tablespoons sesame oil
Step 4: Instructions
- Put flour and salt into a bowl. Stir through.
- Add boiling water.
- Stir the water into the flour with a wooden spoon. Let it cool until you can knead the dough.
- Knead the dough at least 10 minutes on floured surface.
- Cover with a clean kitchen towel and rest 30 minutes.
- Knead 5 minutes.
- Roll dough into a long sausage shape cutting into 7 or 8 pieces.
- Cover dough balls with sesame oil.
- Roll dough ball into thin pancake.
- Brush the skillet or baking pan with sesame oil and heat pan.
- Heat a pan on medium and bake the pancake. Prevent the pancakes from getting brown.
- Turn and bake other side.
- Stack the pancakes and keep warm in a clean kitchen towel.

The pancake is very fragile so be careful when you lift it into a pan.
