This instruction is about how to make a traditional Chinese entree which is called Tomatoes with Fried Eggs. The merit of this entree is you can get all the food materials easily from the local grocery store, and they are pretty cheap as well. And it’s easy to learn and make this entree, you just need to know how to operate the stove and how to use spatula and cook food on a pan and you are good to go. It’s about 15 minutes to make this entree, this timing is also covered for washing food materials and cooking.
From the nutrition perspective, this entree contains amount of nutrition for daily take in, such as Vitamin A, Vitamin D, Vitamin C, Iron, Vitamin B-6 and Magnesium and vegetable fibers, proteins and etc.
Step 1: Materials
- 3 Tomatoes
- 2 Eggs
- 1/3 Cup diced scallions
- Vegetable oils
- Salt (to taste)
- Chopsticks (or whisks)
- Large dish
- 1/4 Teaspoon
Step 2: Cut the Tomatoes to Pieces
In this step, you will need to wash the tomatoes first, and cut them into pieces. You can also peer the tomatoes if you would like to. Use head of the knife to cut off the stalks on the tomatoes. And then put tomatoes into dish for later use. If you would like to dice tomatoes instead of cutting them to pieces, that’s fine.

Step 3: Scramble Eggs
In this part, put eggs into the bowl and scramble then equally. You can use a whisk if you have one, but if you don’t have a whisk, you can use chopsticks instead. Stir raw eggs with chopsticks is just like drawing circles, so you just need to stir chopsticks in one direction, stop until eggs turn into curds. And then spread some salt into the curds. (Preferably 1 ¼ teaspoon)
NOTE: You can adjust salt based on your preference.
Step 4: Dice Scallions
Wash scallions under the water, and dice then into little parts. For the rootlet, we don’t use them. So just cut them off, and threw them away. Put diced scallions into a bowl for later use.
WARNING: Use knife carefully!
Step 5: Fry Eggs
- Turn on the stove with highest temperature, and put the pan on the stove, then, add some vegetable oil into the pan. Rotate the pan and make the oil cover all the pan.
- Wait about 2 minutes for oils to warm up.
- Add egg curds into the pan, and start to stir them with spatula.
- You can dice eggs into small parts with spatula when you stir.
- When egg curds are fully solidified, you should go to next step.
WARNING: Hot oils are dangerous.
Step 6: Add Tomatoes
- Decrease stove temperature to median.
- Add tomatoes into the pan.
Stir them with spatula for 3 minutes.
Step 7: Add Scallions Into the Pan
- Add diced scallions into the pan, and stir 3 or 4 times.
- Add a cup of water into the pan, and cover the pan and stew about 3 minutes with the same stove temperature.
Note: Watching out the stewing time.
Step 8: Load Entree Into Dish
Now, after we finish all steps, a fresh and tasty Tomatoes with Fried Eggs entree is on your table! If you think this entree cannot fill you up, you can also add some rice into the entree and scramble them in the pan. And if you want to do that, you might need to add some extra salt.
CAUTION: since there are knife high temperature oils, so people who are making this entree should be caution of dangerous. Children should have parents’ custody when making this entree.
