Step 1: Ingredients
To make the fish risotto you will need:
- 50 grams of butter
- 2 onions finely chopped
- 20 grams of spring onion chopped
- 1 teaspoon of garlic
- 1 cup of frozen baby peas
- 4 1/2 cups of fish stock
- 1 1/2 cups of rinsed uncooked Arboriro rice
- 400 grams of smoked salmon
- 1 tablespoon of olive oil for the onions
- salt and pepper to taste
Step 2: Chop the Fish, Fry the Onions
Cut the fish into pieces then set aside. Cook the onions in a teaspoon of olive oil until translucent and lightly browned.
Step 3: Adding Everything Together
If you are using a cast iron dish like I did it must be preheated for ten minutes before adding your ingredients.
Add the onion, uncooked rice, fish and fish stock into a casserole dish and mix it through.
