Follow the easy steps below or watch the video tutorial or better yet do both! :)
Step 1: Ingredients/Tools List
- 1 1/2 cups of all purpose flour
- 1/2 cup of powdered sugar (confectioners)
- 1 Tbsp of granulated sugar
- 3/4 cup of unsalted softened butter (1 stick plus 1/2)
Cream Cheese Filling:
- 8 ounces of cream cheese (softened)
- 1/2 cup of granulated sugar
- 1 tsp of vanilla extract
- kiwi, blueberries, raspberries, strawberries, etc.
- Melted Strawberry preserves (or your favorite jelly/preserves)
Step 2: Make the Dough/Crust
First preheat the oven to 350 degrees F. Now let's make our pastry dough/crust. Add the butter, sugar, powdered sugar, and flour into your food processor or bowl with a hand mixer or stand mixer. Now pulse the processor until the mixture it is all mixed together and gets nice and crumbly.
Step 3: Add Pastry Crumble to Tart Pan
Now we add the dough to the tart pan. If you are using a 9 inch pan, don't put it all in, leave about a half of a cup remaining. You can use that with muffin cups and make little tarts. It should make about 6 of them. Otherwise if you use all of this dough in a 9 inch tart pan it will be really thick. If you have a 12 inch tart pan, go ahead and add it all. Use your hands and fingers to press the dough all around, pushing it up on the sides with your fingers. You can also use a pastry roller to help in the process. Once we have completed pressing the dough in the tart pan, it is ready to go into the oven. Bake it for 10 to 15 minutes, until it gets a light golden brown.
Step 4: Let It Cool
After we take it out of the oven, we need to let it cool completely. It should take 20 to 30 minutes.
Step 5: Make the Cream Cheese Filling
While the tart crust is cooling, let's make our yummy cream cheese filling. Add the 1/2 cup of sugar to the softened cream cheese, and the vanilla extract. Then using a mixer mix it really well. Make sure to scrape the sides. When it is done it will look nice and smooth, and taste amazing!
***You can definitely make a different filling if you want. Custard, yellow pudding, chocolate pudding, etc.
Step 6: Clean the Beaters
Makes sure to clean the beaters. So we don't waste any of this yummy filling. You can also just lick the beaters, that is a fantastic way to clean them. haha, just make sure to actually wash it afterwards. ;-)
Step 7: Add Filling to Crust
Next we add our filling to the crust. I add the filling to a bag and make a little piping bag out of it. It is probably not necessary, but I always do it. Just snip off the corner of your bag and you are ready to go. I like to start with the little tarts first. Adding a bit to each one, so I don't forget. But if you have a 12 inch tart pan, you obviously won't need to do that. Then use your spatula and spread the filling around.
Step 8: Add Fruit Toppings
Now we add our fruit toppings. You can use whatever fruit toppings you like. My favorites are strawberries, blueberries, raspberries, and kiwi. Arrange the fruit however you like on the top. It is your tart after all. :)
Step 9: Make Glaze and Brush It on the Fruit
Next we need to make a nice little glaze, well I guess we don't "need" to, it is optional, but I definitely always do. Take some strawberry preserves or other jelly, and melt it in the microwave, about 20 seconds is all that you need. I stir it at the 10 second mark, then brush it on the top of the fruit with your basting brush. I normally don't put it on the kiwi, to preserve the nice green of the kiwi, but on the other fruit it blends in nicely, and it gives the fruit a nice shine.
Step 10: Remove the Tart From the Pan
You can then place the tart in the refrigerator until it is time to eat it. To remove the tart from the pan, just push up on the bottom and the outer-shell ring will come off easy, then use a pie server or cake spatula and separate the bottom plate from the bottom of the tart, gently! :) And voila! We have an amazing tart ready to eat! Add some powdered sugar on top or whipped cream if you like.
