Introduction: How to Make a Potato Salad

It's 4:30pm on a Saturday and you've just received a txt inviting you to a BBQ at friends. Panic! What to wear, what to take!

Ok, first thing to take is a breath because we've got it covered. What you wear...ok, maybe we can't help you with that (except to say you should definitely wear something) but we can help with the meal.

On the way to dinner you can pick up some meat, garlic bread and snacks, but it's always great to take something you've made. So, today we're going to show you how to make a delicious potato salad. It's quick, easy to make and tasty.

So, let's go!

Step 1: Ingredients

You'll need:

  • 3-4 potatoes
  • 1 large onion
  • 100 grams bacon
  • a handful of herbs (we've used fresh parsley, thyme, fennel and spring onion)
  • a decent squirt of mayonnaise

Step 2: Time Is of the Essence...

...but only if you truly are running late to dinner! If so, get busy!

First thing, get the potatoes on the boil until they are just cooked but still firm.

While the potatoes are boiling, cut up the onions and get them frying along with the bacon.

Now finely chop up the herbs and put to one side.

When the bacon and onions are cooked, cut up into small pieces.

Step 3: Mayo Your Spuds Come to Pass

Take your freshly cooked potatoes and cut them into cubes, then lightly fry them in butter until nicely browned.

Ideally you'll allow them to cool down before this next step, however with that dinner date looming there's no time!

Place your fried potato cubes into a bowl and add a good squirt of mayonnaise to liberally cover.

Step 4: Tick...tick...tick...

The dinner party....aaarrrghh! Right, calm down and carry on.

Throw the bacon, onions and herbs into the bowl and mix them together.

Transfer it all to a fresh bowl, throw yourself into some fresh clothes and get in the car!
