How to Make a Tasty Vegan Vegetable Panini

Do you like sandwiches?  Of course you do.  Who doesn't?

Well, next time you want a tasty hot sandwich with no meat or dairy products included, you can follow these easy steps to sandwich happiness.

Step 1: Gather Equipment and Ingredients

Here are the things you will need:

Equipment
  pan to sautee the veggies in, preferably something somewhat deep with rounded sides
  pan to grill the sandwich on
  aluminum foil
  cast iron skillet (or something else that is heavy and has a flat bottom)
  wooden spoon
  knife
  spatula (not pictured)
  brush (not pictured)
  grater (not pictured)

Ingredients
  olive oil
  balsamic vinegar
  bread
  vegan mozzarella (We used Follow Your Heart, but there are plenty of options here.)
  pesto
  tomato
  red onion
  zucchini
  sweet bell pepper (we used an orange today, but yellow or red would also be fine)
  portobello mushrooms

I mean no disrepsect but what exactly is "vegan"? I understand the no meat part, but why? Vegetarians usually have different reasons and I'm curious, because I've never heard about this one....

Vegans don't eat meat, like vegetarians, but they also don't eat milk, eggs, honey or any other product that came from an animal. Like vegetarians, there are lots of different reasons ranging from simple preference to nutritional reasons to ethical objections to eating animal products.

I am not a vegan, but still I think this looks delicious. I, of course, would add shredded chicken and bacon. Oh! and cheese! :) wow.. I really make stuff unhealthy.

The mushrooms really provide as much protein as this sandwich needs and vegan cheese is actually really good, depending on what brand you get. We've had the best luck with the Follow Your Heart stuff mentioned here and another brand called Daiya. The Follow Your Heart brand has a much milder flavor and is a little difficult to melt sometimes, but Daiya (which is actually our current favorite) has a really cheesy flavor and melts just like it should.

I should really try this. I am very out of shape and could use some healthy eating. My family doesn't exactly eat healthy.
