Super easy and extremely tasty. And much quicker than regular pickling!

Great on any roasted or pulled meat, on sandwiches, in tacos, in bean salads, or just by themselves out of the fridge in the middle of the night. 

They'll last for a couple of months in the fridge. :D

Plus, I'm trying a video tutorial for the first time, so skip to the next step to watch me be all awkward. YAY!

LOVE pickled red onions! If you are lucky enough to live near an In'N'Out burger, pickled red onions are AMAZING on one!

Hi Jessy! Thank you for the great recipe. I just had one question. How soon are the onions ready? Do you have to let them set up for 24 hours, or are the onions ready as soon as they soften?

They will taste better after sitting for a bit in the fridge - but they can be eaten right away. :)

Oh yummmm. I don't have any red onions, wondering if yellow ones would work..... going to try it with a yellow till I get to the store again.

Thanks for another great able and have you got a good recipe for pickled eggs? I made them once years ago, but don't remember anything but the vinegar, spices and I think you pour the hot vinegar over the boiled eggs and let them sit a week, but not sure.

Yellow ones can definitely work, but you should add a lot more spices!

And I've actually never had pickled eggs... I saw them in my grandmother's fridge when I was little and I was always a little scared of them, haha! I know this is blasphemy... but I have yet to be reintroduced to them as an adult. :P

There do seem to be a few good recipes here on ibles, though! :)

Oh gosh, how funny! Well, do you like boiled eggs at all? You should try making just a few, 6 to start, then give your own updates if you want. I will go try to find some of the recipes on here for now. I am out of vinegar now, so will have to wait to make anything else pickled or such. My Sadie Lady Kitty Kat had three kittens Saturday morning and two of those died and then around 1:30 AM Sunday she had two more and one of those died..... so I have been too busy with work Sunday to bother to shop or make a list or remember anything.

Thanks for the recipe, it was great.

Oh no! So sad about the kittens - it's always so upsetting when that happens.

But I hope Sadie and her babies are doing well... and you too, sounds like a tough couple days for everyone!

I still have not been shopping. But the first born and last born kittens are doing good now and Momma Sadie is acting a lot better as well. Maybe tomorrow I will make it out to the store. lol.

Thanks so much and the yellow onions are great. Although I want to next make your recipe with the red ones like I am supposed to.

Pickled red onions are awesome! I am known (amongst housemates) to have a container of pickled red onions in the fridge. I typically just throw a bunch of onions in vinegar/water (2:1 ratio) and top off as its consumed :)

That actually sounds too good to be true... I think I'll have to try it.

The current batch turned out a little too sweet to my taste, so I'll have to do a little mixing and matching anyway!

Be warned, it's not sweet. It's fairly acidic (as one would expect) - the vinegar just pulls out the acrid bit out of the onion while preserving the crunch. Now I'm hungry again :p

I don't usually watch the videos but your so cute that even if it was a flop it would be worth it... IT WASN'T A FLOP ! Nicely done ! I LOVE pickled onions and pickled onions with jalapenos. I use the same basic mix you did but sometimes I add some of the left over pickle juice from dill pickles (you know those jars that collect on the frig shelf with one pickle left) When Im doing either pickled onions or my pepper relish I wash the jars and lids very well, rinse in hot water and dry in a hot oven (200f) the last step is using about a 1/4 cup of vodka swished around in ea jar and over the lid

I definitely learned a lot of things NOT to do in later videos... hahaha. But I figured in this one I'll just ride it out being a lady with a cute cat in the background. But it's good to know it's not a flop! YAY!

I hadn't thought about mixing the jalapenos and pickles... I might try that. :D
