Cook inside oven using oven skew or better if cooked over charcoal fire (less than a foot away from charcoal) using bamboo skew, basting frequently with the oil and turning it around continuously to achieve even cooking (about 1.5 - 2 hrs). Try tapping with spatula to check for crunchiness/crispness. Best served with lechon sauce (choped pork liver sauce) or soysauce w/ calamansi (Philippine Lemon)

i am actually part filipin, i also went to the philippine island irriga or something and i saw jeepneys tricycles (the motor kind) and most of the place i even had fresh chicken sinigang i saw the chickens still alive five minutes ago and i saw dead chickens in a bowl of blood. (one of my relatives have a farm) it was a bit humid, i got sick, and i was trampled by a pack of ravenous children but it was ok because i got to keep a chicken as a pet (i called him mr chicken but i was a mrs) and i ate coconuts!

to make the pig more reddish as it cooks,we mix 50% evaporated milk with 50% water for basting otherwise it will be browned only and does not look very delicious
