Step 1: Ingredients

1 pound of sharp cheddar cheese, shredded (you can either shred it yourself, or buy it shredded, either way works)
1 Package of sliced almonds
2 groups of green onions
1 pound of bacon
Mayonnaise

A couple of boxes of your favorite crackers or a few bags of tortilla chips (thick ones).

I had some recently, and I couldn't leave it alone, so good. The person who made it also took some saltines and soaked them in a bag with olive oil and Parmesan cheese over night (they didn't get brittle or soggy) and then covered them in red pepper flake and baked them for about 5 minutes (not sure on temperature, most likely low) and they were the perfect addition.

I'd love to see this come out of one of those brain shaped molds. this dip sounds tasty, but I'd consider it more of a spread.

What about using something like cream cheese, yoghurt, or sour cream, rather than mayonnaise? I ask this, due to the fact that, "wifey" is not partial to mayonnaise, therefore, there is none to be found, in the household.

ranch dressing with an extra tsp of sour cream. Might add depth, too.

There is no real reason for the mayo, except to add in moisture and to hold everything together... so I dont really know, since yogurt would make it more runny... maybe a mixture of yogurt and sour cream?

I suppose. You can also take some of the run out of yoghurt, by letting it sit in a colander or funnel, lined with cheesecloth or coffee filter. I think pre-strained yoghurt is also available. Hey, what about microwaving the whole mess, thus melting the cheese and using it to bind everything together, no mayo or sour cream required? I'm reminded of a dip that we used to get at a restaurant, made with cheese, beer and artichokes... hella tasty!

Straining the yogurt would work pretty well i think. As far as microwaving it... I dunno. It's a cold dip, but it up to you. Modify it how you see fit, its not the 10 Commandments lol. Just post some pics of how it looks and let us know what you did differently.

Alrighty.. Might be a while though, on account of my extreme laziness.
laminterious (author) says: Apr 30, 2008. 10:21 PM
You could also just get a small jar, use it, and say "Hey hun, that yogurt really worked out great!" since she wont be able to taste any mayo.. and when she makes it next time, "Huh, I dont remember what I did to the yogurt the first, but it worked really good..." heh

I dunno, she can detect mayonnaise at parts per billion levels...

Oh - and make sure you use low-fat mayo, of course! ;-)

I can't say that this looks even remotely healthy, but dang, it sure looks delicious! :-)
laminterious (author) says: Apr 29, 2008. 6:07 PM
Well, the canola oil hellmans helps! LoL! But yea, its not very healthy since you are using bacon, mayo, cheese.... but the almonds help to offset some of it. And it IS delicious. Its filling too, so you stuff yourself easy
