Introduction: How to Make a Spanish Tortilla With Spicy Tomato Sauce

A classic egg recipe given a spicy twist with a delicious tomato sauce. View our video version of this recipe.

Method:

Preheat the oven to 200°C / Gas Mark 6. In a non-stick pan, fry the courgettes in the butter. Add the garlic and cook over a medium heat until almost sticky.

Add the potato cubes and the onion and cook until softened. Beat the eggs with some seasoning and add to the pan. Cook until the eggs have just set around the edges.

Transfer to the oven and cook for around 6-8 minutes, until golden on top and the eggs have set. Turn onto a plate.

Make the sauce: in a separate pan, fry the onion, garlic and chilli until soft. Add the paprika, then the chopped tomatoes. Cook over a medium to high heat until everything reduces, then add the sugar and flat leaf parsley. Season.

Cut the tortilla into slices. Serve with the sauce and salad leaves

¡Dios mío! I have never seen such complaining. Can't you guys read? It's a "spicy twist" on a classic recipe. No one said it would be as you remember it. Plus if you pan fry this entire thing it will be overcooked on the outside. Just because your mother overcooked it doesn't mean everyone else has to overcook it. Why don't you try something new?

I have to agree with emartinez and cartago: Spanish tortilla is made out of eggs and potatoes. One can add onions too,but it is optional. I am also spanish.

I'm sorry, but actually it isn't a Spanish tortilla, that's egg cooked on the oven. The Spanish tortilla is everything made on the pan. Even more, Spanish tortilla only has eggs and potatoes.

As cartago said, Spanish tortilla is made out of eggs and potatoes only, and its fried on a pan. (I'm spanish too.)
