Kheer is delicious. It's good hot, cold, runny, thick, with cashews, with fresh fruit, with raisins, for breakfast, for dessert, for dinner, lunch... etc. I really love this recipe. :D

And it's super simple to make! So go on, impress people!

Step 1: Ingredients!

  • 3 cups milk (any kind you like - whole tastes the best, but 2% is just fine!)
  • 1-2 cups water (to determine the thickness. I normally use 1 cup.)
  • 1 cup condensed, sweetened, milk. (I like using fat free.)
  • 1/2 cup sugar (you might want to try 1/4 cup first if you don't want it TOO sweet)
  • 1 tsp. ground cardamom
  • 1 cup rice (please use jasmine if you have it, it's the best as far as I'm concerned!)

Optional: add-ins!
  • fresh fruit (mango is dreamy)
  • raisins
  • dried fruits (especially apricots!)
  • nuts (I really like cashews in this - that's how it's made at my favorite Indian restaurant!)

Instead of condensed milk try omitting the sugar and adding sweetened coconut milk, it's divine.

This sounds lovely, can anyone testify to making it in a rice cooker?

How much sugar and cardamon-sorry if I missed this-are those peaches you added. it looks goooood. Thanks for the instructabe! Well done!

1/2 cup sugar or less, depending on how sweet you like it, and a teaspoon or cardamom. :) Those are mangoes, but peaches are also really good!

I always have made a rice pudding with leftover rice that was cooked normally (anything from long grain, to specialty rices, to instant rice). I put in 3-4 cups of cooked rice, 2 cans of condensed sweetened milk, and stir over low heat; I then sprinkle cinnamon and nutmeg to taste (usually a teaspoon or three of each). It is great to add raisins to, never tried any other fruits or nuts. It is great hot or cold, as you said... yum!

Definitely try the fresh fruit bit, it's heavenly. :D I never seem to have leftover rice. I always find myself eating it right out of the fridge in the middle of the night.

It definitely is. but you could always omit the sugar if you needed to. :D
Hey, sounds delicious, I wouldn't change the recipe. I use condensed milk in coffee and tea instead of milk and sugar, tasty tasty.
