Introduction: Pumpkin Pie
There is nothing better than a slice of warm pumpkin pie on a cold night!
Try this recipe for the best pumpkin pie ever!!
4 cups of cooked, soft pumpkin
1 cup of brown sugar
2 teaspoon of salt
1 teaspoon of nutmeg
1 teaspoon of ginger
2 cups of sweetened condensed milk (2 small cans)
4 tablespoons of sifted plain flour
3 teaspoons of cinnamon (plus cinnamon to sprinkle on top)
1 teaspoon of all spice
Puff pastry (at least 3 sheets)
Step 1: Line the Trays
Step 1. Oil two flan pans, and line with the pastry.
Step 2: Boil, Add and Whisk
Step 2. Boil the pumpkin until soft, then mash it in a large bowl.
Add the condensed milk and mix thoroughly with a hand held electric mixer.
Whisk the eggs together in a separate bowl, and add to the pumpkin mixture, mix it all together again.
Step 3: Mixing
Step 3. Add all other ingredients to the mixture, and beat it again with the electric hand held mixer.
Step 4: Bake It
Step 4. Pour the mixture into the prepared pie shells,sprinkle a little cinnamon on top and bake in a hot oven (200°C) on the top shelf for 5 minutes. Move the pie to the lower shelf, turn the oven down to a moderate temperature (180°C) and bake for another 30 minutes, or until firm and a skewer can come out clean.
