Irish Car Bomb Cupcakes

If there is one recipe that I have made so many times that I've memorized it, it's this one. During March, it seemed as if I was making a batch or three of these nearly every day, to accommodate the cravings of my friends and family.

I had seen other recipes and variations online, but I'm one of those people who can't just stick to a recipe to save their life. I always have to add my own 'spin' to everything.

These cupcakes start with a super-moist Guinness chocolate butter cake, are filled with a fluffy, yet rich, Jameson Whipped Ganache Filling, and generously adorned with Bailey's Irish Cream Buttercream icing.

Where did I ever laugh or make light of anyone dying? Correct me if I'm wrong, but I simply posted some cupcakes that I made that are inspired by an extremely well-known drink, the Irish Car Bomb, which is a concoction of Irish ingredients (Guinness, Jameson Irish Whiskey, and Bailey's Irish Cream), served 'bomb shot' style, where the shot is dropped into the glass before being consumed.

Irish ingredients + bomb shot = Irish Car Bomb

Perhaps you should try to track down the person who invented the drink and express your distaste for the name to them. I, personally, just really enjoy the drink, and, along with many other people, have come up with a recipe for cupcakes inspired by the drink.

I actually just received a book deal with a publisher, and I might feature this recipe in the book. If I change my mind, however, I'll for-sure share! :)
