Italian Chicken w/ Faux-sotto
Super easy Italian! It’s not a true risotto because it's not Arborio rice nor is it really creamy and labor-intensive. I pop it all in my rice maker and it does the work!
2 chicken breasts, trimmed
Italian seasoning, to taste
salt and pepper, to taste
1 tbsp olive oil (or misto sprayer)
1/2 c. brown rice
1/2 c. white wine- not too sweet
1/2 c. chicken broth
1/2 c. chopped mushrooms
1 clove chopped garlic
1 tbls butter
1/2 c. grated parmesan cheese
Toss all rice ingredients except parmesan in to rice cooker- set and forget
If no rice cooker combine in pot over high heat to boil, then simmer for about 20-30 min
Heat skillet to medium
prepare chicken with salt, pepper, Italian seasoning
coat skillet with olive oil
grill both sides until cooked through, about 15 min.
When rice is done mix in grated parmesan
Serve together, enjoy with the rest of the wine!!
