Introduction: Italian Vegan Rice Patties

    Serves about 8

    2 ½ cups cooked rice
    1 clove garlic, minced
    salt
    black pepper
    red pepper
    garlic powder
    parsley
    ½ cup soymilk
    2 Tbsp vegan mayo
    1 cup bread crumbs
    1 cup shredded mozzarella (vegan or non-vegan)
    canola oil for frying
    bread crumbs for coating
    marinara sauce for dipping
    *Add onion, red pepper, green pepper for added flavor and color

Mix all ingredients together in a mixing bowl.

Set a large frying pan over medium heat with canola oil ready to fry the rice patties.

Coat the patties in breadcrumbs and place in the hot oil to fry, crisp and melt the cheese.

Serve with marinara sauce and enjoy!

Thanks for the comment! Usually I start with a 1/4 tsp each and work up from there- it's better to add ingredients like seasonings in increments rather than too much all at first
