Introduction: Jeera Chicken (Spiced Chicken)

Great served with yogurt dipping (recipe included)!

Step 1: Method

3 tbsp cumin seeds

3 tbsp oil (olive is best)

1/2 tsp black peppercorns

4 green cardamoms

2 fresh bird eye chilies, finely chopped

2 garlic cloves, minced/crushed

About 2.5 cm ginger root, skinned, grated

1 tsp ground coriander

2 tsp ground cumin

a pinch of salt

8 chicken drumsticks or thighs

1 tsp garam masala

Dry-fry 1 tbsp of cumin seeds for 5 minutes, stirring often. Remove from heat and set aside

Heat oil and fry the remaining cumin seeds, peppercorns and cardamoms, stirring often

Add in chilies, garlic and ginger, stir to combine

Add in the rest of the spices, stir, then add in chicken

Cover and simmer for 25 mins

Add garam masala and toasted cumin seeds, cook for another 5 mins long

serve with yogurt dipping!

Yogurt Dipping

1 1/4 c plain yogurt

2 tomatoes, skinned, seeded, chopped

a pinch of salt

1 tbsp chopped fresh coriander (optional)

Mix all and chill before serving
