A delicious new tequila drink invented by a former sushi chef, Gerard Dumuk, of Midori Mushi. Requires tequila, a lime, maple syrup, ice, a cocktail shaker, a martini glass (negotiable) and a mixture of 3 parts smoked sea salt to one part paprika for the rim.

Step 1: Ice

Chill glass with ice. Fill the shaker half full with crushed ice.

Step 2: Mix Liquids

In the shaker, pour 2 oz tequila. Roll the lime lime under your hand, cut it in half, then squeeze juice of both halves into shaker. Do not discard lime rind yet! Add 2 tbsp of maple syrup to the shaker. Shake well!

Step 3: The Glass

Empty the ice from the glass. Rub lime rind on the rim. Dip the rim in the salt mixture. Pour liquid into glass. Enjoy! If you have extra smoked salt and paprika, don't toss it; sprinkle it on slices of Swiss cheese. Trust me it is delicious!
