Introduction: Kadhai Paneer

Kadhai Paneer is a delicious Indian dish which combines onion, bell peppers and paneer (Indian cheese) for a spicy, tangy flavor.

For this dish you will need:

2 large bell peppers
6 tomatoes (quartered)
2 inch piece of ginger
2 large red onions
1 lb paneer diced
1/2 tbsp. turmeric
1 tbsp. coriander powder
1 tsp. black pepper
1 tbsp. red chili powder (adjust according to taste)
1 tsp. mustard seeds
4 tbsp cooking oil
1 tbsp. vinegar
Salt to taste

Step 1: Step 1

Take 3 tomatoes, 1 onion, and ginger and grind in the blender. Take both bell peppers and the remaining onion and cut into long slices. Saute the bell peppers and onions in 2 tablespoons of oil on medium heat  until they are sightly soft  and then remove to separate dish. Heat remaining oil in pan and then add mustard seeds. Wait for the mustard seeds to start "jumping" and then add the tomato/ginger/onion puree.

Step 2: Spice It Up!

Add turmeric, coriander powder, red pepper, black pepper and salt to the pan. Stir the mixture until the oil separates from the gravy. This step should take about 10 minutes.

Step 3: Last Step!

Add the diced paneer to the gravy and let cook for two minutes. Then add the quartered tomatoes and previously sauteed bell peppers and onions and mix in gently. Turn off the stove and add the 1 tablespoon of vinegar and mix well. Enjoy this delicious sabji with naan or your bread of choice!
