Laugh out loud when you tell your friends about the time your Labrador ate your mothers wedding ring, and it took three days of 'investigating' to locate it.
But our LOL is all about Lemon, Orange and Lime, and so we've created the LOL Biscuit Bun.
I had to work hard to keep my four year old from eating the whole jar full of these! The LOLBB is great for quick snacks and it's citrus flavor is refreshing.
Step 1: Ingredients
- 2 C flour
- 80g Sourdough Starter
- 1/2 C fruit concentrate
- 1 orange peeled and cut into pieces
- 1 lemon peeled and cut into pieces
- 1 tbsp lime juice
- 1/2 tsp baking soda
- 1 tbsp cider vinegar
- 1/2 C prunes blended to a paste
- 60g butter
- sprinkle of sugar
I didn't have a fresh lime available so I used lime juice.
Step 2: Roll Up Your Sleeves
Hope you have fun mixing...we chose to mix by hand for this first stage.
Place the flour on a clean surface, then add the sourdough starter, lemon and orange pieces and lime juice, then pour on the fruit concentrate. Begin to work the mixture, bringing the flour up from the edges taking care that any liquid doesn't pour off the bench onto your white pile carpet. When mixed, you'll end up with a firm ball of dough.
Step 3: Shape Your Dough Ball
Continue to work your dough into a ball until all of the fruit pieces are evenly mixed through.
Step 4: Into a Bowl You Go...
Place the dough into a bowl, cover it and leave overnight for the sourdough to activate throughout the mix. Note the before and after pics to demonstrate the size gain.
Step 5: Prune Butter...yes, It's a Thing!
Add the butter to your blended prunes and blend together.
Step 6: More Mixing
Place your prune butter in a fresh mixing bowl and add the sourdough and baking soda. Beat vigorously!
Finally add cider vinegar and mix.
Step 7: Shaping Your Future
Draw from the mixture cookie sized portions of dough. The dough is very sticky so keep your fingers wet with water. Place on a baking tray, do a final shaping with your hand then sprinkle a little sugar over each one.
Step 8: Cook It
Your biscuit buns should go in the oven for 20 minutes at 180C (360F) or until golden brown.
They're ready to eat!
Serving suggestion: You may like to cover your biscuit bun with a glaze made from sugar, water and gelatin.
