Introduction: Lembas Bread!!!! (GF,DF)
This lembas bread recipe contains no gluten or dairy and is soo yummy!!
In the movie the lembas bread has more of a shortbread texture. I decided to make mine more bread like. It makes it more easy to carry around ( lembas dust any one?)
Step 1: The Flours
I usually use a mix of these flours for most things I bake. I find that using GF flour alone gives it a gross taste
1/4 cup potato starch
1/4 cup amaranth flour
1/4 cup GF flour ( I use Bob's red mill)
1 cup oat flour ( I usually put some oats in a blender till it is a flour consistency)
Step 2: Wet Ingredients
Add to the dry ingredients.
1 teaspoon vanilla extract
honey to taste ( some times you want it sweet some times more savory)
milk till pourable ( I use coconut milk)
you can also add fruits and nuts, i've added currants, which are really good, adding beef jerky is even better!!
I line a cookie sheet with parchment paper. MUCH easier then greasing it. Bake for 350 for 40 minutes
Wrapping in Mallorn leaves is optional.............
