Lemon and Poppy Seed Cookies

Lemon and Poppy Seed Cookies! It had to happen eventually! Cookies are the best - the only downfall is, they usually don't last very long out of the oven!

Lemon and Poppy Seed Cookies

Poppy seeds are interesting little seeds, with a bluish hue and quite a distinct flavour. Nutty, and a little bitter, they go well with sweet things, as that masks the bitter flavour. Even though derived from the opium poppy, these little kidney shaped seeds do not contain any narcotic properties! They are however, high in anti-oxidants, dietary fibre and essential fatty acids. They are also good sources of iron, calcium, zinc and magnesium. Read more about the properties of poppy here.

These Lemon and Poppy Seed Cookies are yum yum yum. I think we should have a poll. In Australia, I've always grown up saying biscuits, not cookies. But I know in the USA, a biscuit is more like a scone. So, what do you think I should call these from now on? Biscuits or Cookies? I think I'm leaning towards calling them cookies! Lemon and Poppy Seed Cookies

Step 1: Ingredients

What you will need!

1 cup of Flour
1 tsp of Baking Powder
1/2 cup of Almond Flour
2 Tbsp of Raw Sugar
1 pinch of Salt
1 Rind of one small Lemon
3 Tbsp of Vegan Butter (we used Nuttelex) Melted
1 Tbsp of Maple Syrup
Juice of half a Lemon

Step 2:

Preheat the oven to 180℃

Mix dry ingredients - the flour, baking powder, almond flour, salt, raw sugar, poppy seeds and lemon rind in a mixing bowl

Step 4:

Melt vegan butter and add lemon and maple syrup. Add this to the dry ingredients and mix thoroughly until it becomes a dough

Step 5:

Roll the dough out onto a floured surface and cut the cookies with a cookie cutter

Step 6:

Bake in the oven for 18 minutes

Let cool for around 15 minutes then try not to eat them all!
