Introduction: Less-Horrible-For-You-Chicken Alfredo

1 package multi-grain fettuccini/spaghetti/whatever you fancy
2 cloves garlic
1 cup white cheddar cheese
1 cup fat free half and half
1 chicken breast
1/2 cup reduced fat grated parmesan cheese
Olive oil
Salt and pepper to taste


Set pan to pre-heat on medium, spray with olive oil
Set pasta water to boiling, salt well
Trim and season chicken breast with salt & pepper, cut into small pieces
Cook pasta to package directions
Cook chicken until done, about 10 minutes
Meanwhile, set another pan to medium, heat 1 tbs olive oil
Chop garlic
Cook garlic until just before browning, roughly 2 minutes
(careful, it burns quickly)
Add half and half
Add half cup cooking water from pasta
Drain pasta, combine with chicken, sauce, cheeses
Salt and pepper to taste
(sauce will thicken upon standing)
Serve and enjoy!
