Introduction: Loaded Fried Potatos

This is a combination of a couple of recipes from various cooking shows, heavily salted boiled whole potatos, boiled potatos smashed and fried and a little of my own spin. :::: DISCLAIMER:::::: This is NOT a dish for the health conscious or those on a diet :::: DISCLAIMER:::

Step 1: Round Up Your Supplies

For this recipe I rounded up some small red potatos, about a cup of salt, some bacon, an onion, some cheese, a medium size pot and my trusty cast iron skillet

Step 2: Salted Potatos

There are some sections of the USA where boiled potatos with a heavy salt crust are very popular, Im not from there but the idea is a tasty one. I put 5 handfulls of salt into approx a quart of water, inserted the washed potatos and brought to a boil until a knife inserted easily, they were then allowed to cool

Step 3: Bacon and Onions

While the potatos cool you have time to cook the bacon and lightly brown the sliced onions (save the drippings for the next step) put both the bacon and onions aside they have cooked

Step 4: Mini "ible" Condiment

WOW an "inble" IN an "ible" ! A large Burger chain has a zesty sauce for their onion rings and in my opinion its rather tasty, I puttered around and came up with this close alternative. Approximately equal portions of a horseradish sauce (I get mine @ the dollar store) and catalina salad dressing with some salt and pepper thrown in. It has multipul uses from a dipping sauce for french fries, onion rings, shrimp or grilled cheese sandwichs to a condiment on a roast beef sandwich or....

Step 5: Potatos Part 2

By now the potatos have cooled down enough to handle and its time to smash them and brown them, its as easy as it sounds, just press down on the potato until it flattens then put in the hot bacon grease, repeat until the skillet is filled with potatos, allow them to cook for 6-8 minutes and then, drizzle more bacon grease on the top and carefully flip to brown the other side, scatter your already browned onions on the top, sprinkle on the crumbled bacon and top with shredded cheese. ( I used chedder cheese but I think next time I'll try crumbled blucheese) You can remove from the heat and let the residual heat in the pan finish melting the cheese like I did or pop the skilklet in the oven to brown the cheese

Step 6: Time to EAT !

If you like homefries, hash browns or any variaty of fried potatos you know that they go with everything from breakfast to supper, I decided on having mine with scrambled eggs and cheese
